Thin Mint Cookies

These cookies are a play on a nostalgic classic...think Girl Guide cookie meets After Eight, but all grown up and ready to party past curfew. Crisp chocolate cookies take a dip in silky dark chocolate, bringing a cool minty snap that’s fresh, a little fancy, and just the right amount of indulgence.

Ingredients

  • 6 oz softened Butter
  • 1 cup sugar
  • 1 egg
  • 2 tbsp Vodkow Chocolate Mint Liquor
  • ¼ tsp peppermint extract
  • 1 ½ cup flour
  • ¾ cup dark cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt

Coating

  • 15 oz dark chocolate
  • ¾ tsp neutral oil
  • pinch of sea salt

Instructions

  1. Cream butter with the sugar until light and fluffy, add egg, liquor, extract and salt. 
  2. Sift flour, cocoa powder and baking powder together. Add to butter mixture and combine until smooth.
  3. Divide dough in half and roll each portion to 1/4 inch thickness. Using a fluted 2inch cutter, cut out as many as you can, re-rolling as needed until all the dough is used.
  4. Chill on parchment lined sheet trays for at least an hour.
  5. Bake cookies at 350° for 8-10 minutes until matte and set-cool.

Coating

  1. Melt all coating ingredients together over a double boiler.
  2. Dip cooled cookies completely, tap off excess and place on a parchment or silpat-lined baking sheet. Pop in the fridge to set and enjoy!
